The Poitín team is a diverse group from different cultures and backgrounds, all working toward the same goal, aiming for excellence.

Ian Tucker


Ian is an Irish native and emigrated to Houston from Ireland in 2015 after meeting his Houston born wife in 2014. In Dublin, Ireland, he owned and operated two highly successful, multi award winning Bar & Restaurant concepts, called The Exchequer. Ian was also elected to the position of Chairman of the Restaurant Association of Ireland for two years before his departure to the US. Since arriving in Texas he opened Balls Out Burger in the Heights in Houston before opening Poitín in 2018.

Todd Leveritt

Director of Operations

A New Orleans native, Todd has nearly 15 years of experience in restaurant management under his belt after serving as a Non-Commissioned Officer in the Marine Corps Infantry. During his professional career in Houston, Leveritt has worked as Restaurant Manager, Sommelier, and Director of Operations at the acclaimed Aries Restaurant and its casual cousin Gravitas American Bistro, along with Hotel Icon / Voice Restaurant and El Big Bad.

Dominick Lee

Executive Head Chef

After moving to Houston from New Orleans to attend The Art Institute of Houston, Chef Dominick was awarded the inaugural Chris Shepherd Underbelly Scholarship, which funded a significant portion of Lee’s education at The Art Institute. Chef Dominick worked as sous chef at the Bay Oaks Country Club in Clear Lake while at chef school.  and soon after, he met beloved Houston chef Kiran Verma and landed a job as Executive Sous Chef at Kiran’s, where he gained a firm understanding of the Houston culinary landscape training closely under Houston’s godmother of Indian cuisine.

Dory Fung

Executive Pastry Chef

Dory is a Houston native with a passion for pastry. After cutting her teeth in the kitchen of her family’s Cantonese kitchen, eating crab puffs and ringing the bell for ready orders, Dory then trained at Houston Community College where she received her degree in Baking and Pastry. Stints at the Marriot in San Antonio and Houston Country Club as Assistant Pastry Chef were followed by a role as Head Pastry Chef in Yauatcha Houston. Her most recent position was at Aqui in Montrose.

Sarah Cuneo

Beverage Director

Sarah grew up in the Houston suburb of Spring, Texas and studied Creative Writing and Contemporary Music at the College of Santa Fe in New Mexico. After moving home, she planted her feet firmly within the local Houston hospitality scene and has spent her recent years in the industry at Anvil Bar and Refuge and as the General Manager of The Pastry War. Both are among the most popular libation destinations in the City of Houston. Anvil has garnered many accolades since it opened, including being named a James Beard finalist in 2018.

Chris Fleischman 

Service manager

Chris has been cutting his teeth in the Houston hospitality scene for over ten years, with notable stints at Hotel Zaza, Pax Americana and most recently, the position of General Manager at Riel in Montrose. Chris is a fully qualified Sommelier and is excited to bring his experience and personality to Poitín.

Caroline Morris

Director of Events & Catering

Caroline moved to Houston three years ago from New York City, and is proud to now consider Houston as her home. Caroline had an early passion for the hospitality industry and has spent the last few years working with Vallone’s Restaurant Group, at Vallone’s and Ciao Bello, in their Social Media and Event Planning teams. She has discovered that her true passion is to be working with guests on making their events ones to remember!
