Chris has been cutting his teeth in the Houston hospitality scene for over ten years, with notable stints at RIEL, Pax Americana and most recently, Hotel Zaza Museum District. Chris is an experienced wine director and is excited to bring his experience and personality to Poitín.
After moving to Houston from New Orleans to attend The Art Institute of Houston, Chef Dominick was awarded the inaugural Chris Shepherd Underbelly Scholarship, which funded a significant portion of Lee’s education at The Art Institute. Chef Dominick worked as sous chef at the Bay Oaks Country Club in Clear Lake while at chef school. and soon after, he met beloved Houston chef Kiran Verma and landed a job as Executive Sous Chef at Kiran’s, where he gained a firm understanding of the Houston culinary landscape training closely under Houston’s godmother of Indian cuisine.
Ian is an Irish native and emigrated to Houston from Ireland in 2015 after meeting his Houston born wife in 2014. In Dublin, Ireland, he owned and operated two highly successful, multi award winning Bar & Restaurant concepts, called The Exchequer. Ian was also elected to the position of Chairman of the Restaurant Association of Ireland for two years before his departure to the US. Since arriving in Texas he opened Balls Out Burger in the Heights in Houston before opening Poitín in 2018.
